Sweet Potato Casserole 1 (2 lb. 8 oz.) can cut sweet potatoes, drained 1 (8 oz.) can crushed pineapple, drained 1/2 C. maple syrup 1/2 C. pecan halves 1/4 C. sliced dried apricots 1/4 C. packed brown sugar 1 Tbsp. butter or margarine, melted 1 tea. ground cinnamon 1 tea. pumpkin pie spice 1/4 tea. salt Preheat oven to 350 degrees F. Place sweet potatoes in unprepared 1 1/2-qt. baking dish. Combine remaining ingredients; pour over potatoes. Bake, uncovered, 45 min. or until heated through. Makes approximately 8 to 10 servings.
