Zucchini Tomato Casserole1/4 C. butter 3 med. zucchini, sliced 1/8 in. thick 1/8 tea. garlic powder 4 med. tomatoes, sliced 1/4 in. thick 1 lrg. onion, sliced 1/8 in. thick 1/2 lb. fresh mushrooms, sliced 1/8 in. thick 1/2 C. mozzarella cheese, grated Preheat oven to 400 degrees F. Sauté zucchini in butter with a very light sprinkling of garlic powder. Layer zucchini, tomatoes, onions and mushrooms in a 2-qt. casserole. Top with cheese. Bake 15 min.
